Did you know Via Italia make fresh pasta every day? The pasta is made from organic "00" flour, durum flour and eggs. The flour comes from our dear partner in Italy and the eggs come from Sørli Gård in Østfold.
We make tagliatelle and casarecce daily as well as ravioli – pasta pillows filled with porcini mushrooms and parsley or spinach and ricotta. Beautiful and taste fantastic with melted butter and sage. Our fresh pasta can be used with tomato sauce or pesto. And everything can be enjoyed either in Mathallen or taken home for an excellent and quick meal. The cooking time is 3 minutes for ravioli and 2 minutes for tagliatelle and casarecce. Should there be a need for other types of pasta, just contact us.
Carbonara Pasta
2 persons
2 egg yolks
4 tablespoons grated parmesan
6 tablespoons of cream
75 gr bacon/pancetta
250 g fresh tagliatelle
Mix together egg yolks, parmesan and cream and add a little ground pepper. Cook pasta for 2 minutes. Drain the water and add the pasta to the cheese sauce. Stir well so that the sauce sticks well to the pasta. Place the pasta on a plate and sprinkle with parmesan. And add a little ground pepper at the very end. And voila, dinner is ready.
